all about the pineapple…

A few blogs ago I was raving about the pineapple upside down martini! So yummy!  Well, we have perfected the recipe at home!  A few days later I found a recipe for Grilled Chicken Kabobs, Pineapple Quiona, & Homemade Pineapple Vinaigrette on a gutsy girl.  Well tonight, I apparently fed my unknown pineapple addiction and we attempted the recipe!

Here it is for ease purposes, but all credit goes to a gutsy girl.

Ingredients

  • cubed boneless, skinless chicken
  • red onion
  • green pepper
  • red pepper
  • quinoa
  • spinach
  • raw almonds
  • Mini Babybel Light
  • pineapple
  • vinaigrette: pineapple (just a couple pieces – finely chopped), basil (a pinch), olive oil (5 tbsp), white wine vinegar (1 tbsp), unsweetened almond milk (1 tbsp) (Note: If you want more or less quantity, essentially it’s 5 parts olive oil to 1 part white wine vinegar and 1 part unsweetened almond milk.)

Directions

  1. Place your chicken cubes, onion and peppers on the skewers
  2. Cook your quinoa (I made 1.5 cups of quinoa to 3 cups of water)
  3. While the quinoa is cooking, make up the vinaigrette by combining all ingredients and placing in a blender (if you have a small blender that will work best – i.e. Magic Bullet)
  4. Grill your chicken skewers
  5. Once the skewers are done, place them on a bed of quinoa (I also mixed a little fresh, chopped spinach, raw almonds, Mini Babybel Light Cheese and chopped pineapple in with the quinoa)
  6. Drizzle the vinaigrette over the entire meal, adding as much or as little as you like

Although we ended up doing a few differences…

  • We didn’t use almond milk. We don’t really have a use for it, so instead I just put some extra pineapple juice from the can in the vinaigrette.  (We used canned this time to try the recipe!)
  • We did not kabob the meat we just cut everything up and put it in a pan with a tiny bit of the vinaigrette and a tiny bit of olive oil on the stove.  We can never get kabobs to cook evenly, probably because we can never make them even, so it was just easier for us!
  • We also used brown rice instead of quinoa.  We didn’t have time to run to whole foods for quinoa as our publix doesn’t sell it.  However, it was still super yummy!

Man, oh, man, was it delicious! Super healthy, fresh, and tasty! Everyone in our household enjoyed it!  I should have taken a photo, but I didn’t.  However, I did take a photo of our lunch, homemade sushi!

Home made sushi anyone? Yum yum!

Definitely, a yummy day food wise!

    I went to DL but didn’t have time to try to pineapple upside down martini. I’m on the hunt for it next time for sure though! this recipe sounds delicious! I’ll have to try it. Thank you for sharing!!
